I got 20 bottles of expensive balsamic vinegar from asda for 12 p a bottle. .I ran out of vinegar, so decided to do the last of the pickles with it.
Has anyone else tried this or am I completely barmy?
I bet the vinegar will taste scrummy on chips when the onions are gone.
I like pickles 3 weeks after they have been pickled. That way they still have plenty of 'bite'.
Anyone got any thoughts on doing pickles in cider vinegar, red wine vinegar, tarragon vinegar etc ?

I just saw a recipe somewhere on the internet for balsamic vinegar pickled onions- I'm sorry I don't have the link, but a google will probably find it.

I have some left over white lisbon spring onions I thought I might try; but no one can tell me if it will work! :'(
Any suggestions?
I used shallots. My friend says he always uses them so I gave it a go.
I wouldnt have thought there'd be a problem using white lisbon, as I think they grow up to be like normal onions anyway if left too long (be nice to me if I am wrong ::))
Why not give it a go. Even if they dont taste as you would expect, they will still probably be scrummy ;D Who knows, you may discover the best onions to pickle are white lisbons.

I always put some balsamic in with the beetroot, adds a nice taste :)

probably a quarter balsamic to ordinary malt, I have some cider vinegar I'm going to try pickled onions in that, may just do a small jar to see what it tastes like..the balsamic is a bit sweeter so it's nice in the beetroot..not sure what to do the red cabbage in yet ;D
