I've just sorted my latest crop and put onions and garlic for drying and potatoes have been washed and split into keepers and eaters.
Now I have a fair pile of potatoes that need eating soonish and some onions and garlic with touches of white rot that I want to consume the good bits of sharpish. Has anyone got any exciting recipe that calls for these ingredients?
If not I thought I'd fry onion and garlic in olive oil with a bit of celery and some fennel then stir in the boiled potatoes.
What do you think?

Potato and leek is great, so potato onion & garlic must be do-able.

Chuck in some green peppers and lots of olive oil and you've got patatas a la pobre! just fry the lot up with lots of salt, thats it!
So onions, garlic, green peppers, potatoes (preboiled or not?) chucked in olive oil, bit of salt and pepper after a bit and good either hot or cold I would have thought, or even, for patatas de los ricos, with a few beaten eggs poured over?

Gratin Dauphinois for a treat? Slice all the veg very, very thinly and mix it all up with enough double cream to cover the lot, dot with butter and plenty of salt then wack it in the oven for about an hour. Lovely with french style peas - ie peas, lettuce and bacon all cooked together.
As i say though, only for a treat...

OOOOOHHHH yes!!! There is nothing like potato dauphinois!! BUT if you want a better for you version then do 'Boulangerie' Potatoes, cut and layer the pots and onions in a buttered lasagne style dish, pour a good stock over instead of cream, add plenty of black pepper and cook for approx 30 -45mins. MMMMMMMMMMMMMmmmmmmmmm :P
yes yes yes to all of those. I love potatoes just simply fried in the pan with onions and garlic or roasted in the oven with thyme and rosemary. But I agree that a Spanish tortilla seems the way to go.
What about a curry? I seem to think there is a popular Indian dish made with potatoes, peas and onions.
And the humble Cornish pasty? Now that's a tasty supper...
