Title: The thinnings from my apple tree went into this
Post by: ceres on July 13, 2008, 17:21:16

A plot neighbour gave me a recipe for Dorset Apple Cake on the day I thinned my desert apple tree.  The recipe uses cooking apples but I thought the small sour thinnings might work and they do!  It's yummy.

The rest of the thinnings are going through a jelly bag now - apple jelly tomorrow!

Glad to see this post - apple thinnings are a great boon this time of year.
DTW apple thinnings are the small and misshapen apples that you remove from the tree after the June drop, so that the other apples that are left grow bigger and juicier.
My thinnings tend to be used for sage & apple jelly, mainly because the sage is also ready about now.

Jenny, I used your recipe that I found here for my jelly.  Thank you!

what are thinnings?

When you have a cluster of apples, and it is obvious that there are too many to be viable.  You take out some of the smaller apples so that the best are allowed to produce, I think.
