Title: Lettuce, rocket, rosso

I have loads and loads of lettuces, rocket and rosso but can only find one recipe for a soup.
does any one have any other suggestions or recipes as it seem such a waste to throw them on the compost heap please ?

petits pois a la Francaise is a good way to use up cos lettuce. I don't shred the lettuce, but cut it into slices through the stem

RT's type of peas are one of our favorites, and you can also braise lettuce such as Little Gem.

Had rocket on my pizza last night......last 5 mins, throw on the rocket and drizzle with olive oil.
I often throw it into pasta when you add the sauce at the last minute.

If you fancy any of:-

Lettuce

fillets of trout in
pigeon wrapped in
plaice in lettuce packets
steamed pork in
trout baked with
tuna fish bake

I'll type them up and post them.

My Italian friends used to make a lettuce & onion frittata.....sweat down sliced onions, cover with shredded lettuce, pour over the beaten eggs with seasonings..then do the usual frittata bit, topping with grated cheese if you like.
