Title: Blackcurrants

Hi all.  I know this will sound really really stupid but how do I cook blackcurrants so I get juice?  I tried putting some in a bowl with sugar in the microwave but it just came out a horrible coloured mush.  I do this to cook blackberries and it comes out lovely.  I want the blackcurrants so I can spoon the fruit with juice over plain yogurt.........well that's how I like it.  Thanks.

Not everything takes to being microwaved.  Try it in a saucepan on the hob.

Thanks valmarg.  I take it I should put a little water and sugar in - like rhubarb?

Depends how much juice you want - I tend to cook mine just by themselves with some caster sugar, but I do mash some of the berries to releash the juice.

I wouldn't bother with any water.  Just sugar and the currants.   Let the currants macerate with the sugar for a while, then slowly dissolve the sugar, cook gently for a while, then sieve.

Oh and weight for weight sugar to currants, ie 1lb currants to 1lb sugar.
