I planted out my leeks fairly late last year consequently I still have quite a few left that have now sadly gone to seed. I understand that you cant eat them when this has happened but can anyone tell me why?
If it is just because they are tough can I not make a soup or stock with the last few?

You can make perfectly good soup with them - bung it through a coarse sieve as the middles are like wood, but the taste is fine. Then add them to yer boiled spuds... yum!
But leave a couple and save the seed!
They won't come true year after year,
but once or twice is OK

I made the soup but struggled with the sieve !! But the taste was well worth it !!
I have also left a couple for seed as you suggested
