Title: Rhubarb marmalade
Post by: davee52uk on May 24, 2008, 21:17:14
This produces a very thick chunky marmalade. If you want something a bit thinner then just use the juice of oranges and lemons and very little of the peel.

2 lb oranges and lemons
2lb rhubarb
3lb sugar
cloves and ginger

Peel and chop up the oranges and lemons into small pieces. Chop up the skin of the oranges and lemons into into smalll chunks. Add sugar and rhubarb cut into small chunks again. Add abit of water and bring to the boil. Test for set and then bottle.

.....and you can also top up with whisky once bottled - any sort will do. This gives most jams and marmalade a great taste.

I love the sound of this chunky marmalade but wonder if the taste is predominantly rhubarb or is there a good citrus tang to it?

and it sounds so easy!!

sorry for delay in responding - don't get into group so often nowadays & have been peeking in as a guest instead (& feel maybe I shouldn't poke my nose in) but was 'drawn' to this as I'm a marmalade fan :P ;)
