Title: Celeriac

Just dug up the last couple of celeriac plants - can you freeze them ...and if so, how?

I'd purée them and freeze them - delicious mixed with sweet potato for soup, or mashed with apple as roast meat accompaniment.  Have never tried freezing it in cubes because of the space it would take.

No  one on our site has had great success with these they all seem to get purple and brown spots in them.

I like them roasted and part roast them then freeze.

Hi Purple Heather

I think if you peel them, cube them and blanch them they should be OK in the deepfreeze.  I used the last of mine a couple of weeks ago.  Also as mentioned above could also be used in a soupe and liquidized before freesing.

I also had a good harvest despite them looking like aliens.
