Title: Smoking Chillies
Post by: Biscombe on May 10, 2008, 09:22:40
I'll have too many chillies that I know what to do with soon! I was wondering if any of you smoked your crop to make powder? i just bought some smoked chilli powder from Pepper Joes and WOW its sooooooooo good! I don't want to go out and buy an expensive smoker, I was thinking about making a smoker, any pics, or advice out there?

I think Jamie Oliver did something  like that in his last but one series for fish but I think would work with chillies  he used a large
sweetie tin ,I'll try and find out. Soon by the sounds of things.

you can use a wok with a lid and something inside to rest the chillies on, but yes basically anything that's fire proof, with access for the smoke to subject and bung it on or rather in the barbie  :)

what will you use to add flavour - other herbs, sometimes teas are used, lovely scented wood chips?

If you have a BBQ with a lid you can use it as a smoker, get some wood chips and put them in a tin, gentle heat. Put the stuff to be smoked on the tray and close the lid.  I have no idea about times but I am led to belive this will work.

We used to smoke salmon in Canada with a smoker made from an old fridge, a bit big for chillies but my point is that we found the plans on the net along with tips on the different wood chips to use for different flavours, it worked well for us till we could afford to buy a proper little smoker. I think a little googling will pop up all sorts of plans for you.

Good luck,
