Just picked up some fresh curry leaves, no idea what to do with them.
Any idea?

Check out your recipe books!!-added late to curries/SE Asian food,stir fried in oil to flavour the oil you then go to cook something else in--the list is endless.

only ever used dried ones but they are fab as already mentioned in curries etc
Debster-dried ones are nothing compared to fresh ones-I can`t get them around here-so maybe Cam will be nice to me???

While you're thinking - FREEZE them.
And you bought them for Curries? Idealistic, to my simple mind, but the best recipes use them.
For any recipe that states 'bay leaf' and after first using fresh curry leaves I substitute them every time....are they addictive? ;D
Cool i might go back up next week and get another bag, there still on there stalk (looks like someone has just trimmed back hard a hedge) so i guess they will keep longer if i leave them on the stalk.
Got them in the fridge and a friends is going to bring over there madar jaffrey cooking cooks for me to pic some recipies out of ;)
Interesting that even such as this - http://www.asiafood.org/glossary_2.cfm?wordid=3260 - don't suggest freezing?
I still believe that individually wrapped & frozen 'branches' hold their flavour best?
I think the answer is to try some recipies with fresh leaves and to dry some out and freeze some and see what works for me ;)
Lucky you Cam! I can only get dried ones here! I use mine in daal, they add real depth Mmmmm!
