Title: Freezing Broccoli?
Post by: GodfreyRob on April 24, 2008, 08:21:34
We are running out of ideas to use up our sprouting broccoli which has done really well this spring. I don't want to waste it so does anyone know if it freezes well and how to do it?

I find it freezes acceptably.  Certainly better than Cauliflower.

As to method, take your pick. There's plenty advice on the net. But for PSB there is no need to soak first!

For short term, many do not blanch, but for long term it is always recommended.

I don't 'prepare' mine & I steam rather then boil.

I did not find that it froze that well (may be the variety or the way I did it)

But it can be made into soup which does freeze. Use a recipe for broccoli or cauliflower soup.

I covered some, raw, with a cheese sauce and froze that, then baked it later, it was not too bad.

Like most things, once you have had them fresh, frozen is a mere shadow of that glory.

I froze some of my last year, it wasn't the best when taken out of freezer, very brittle and crumbley   :( I will blanch my next year  ;)
