Title: Its raining so time to cook ! (Banana cake)

went to collect my 4 yr old niece from Nursery yesterday, and came away with a banana cake recipe!

Heavy rain has stopped me from digging new veg border in garden,so will make the cake, which I'm told freezes well.

RECIPE

150g margarine 
225g sugar               
300g SR flour                    * Mix dry ingredients together             
1/2 tsp bicarb of soda
1/2 tsp salt
2-3 blackened bananas
1 tsp vanilla essence
3 whisked eggs
chocolate chips (optional)

METHOD

Melt marg and sugar together in pan
Remove from heat and add dry ingredients
Add whisked eggs and beat with wooden spoon
Add mashed bananas and vanilla essence
Bake in round or square 8" greased and lined tin.
Cook in oven gas mark 3/ 170c for 1 hour.

Tastes nicer when eaten following day

Its cooking in oven. Didn't have choc chips so bashed up half a lindt 70% cocoa choc bar  :P

Debs... will need willpower of steel to wait until tomorrow ;D

Have just tasted some.

It is nicely moist and VERY moreish - the dark choc tastes very good

Recommend it  :P
