I've started off some sprout seed in seed trays. I put them in a mixture of 5 parts soil to 2 parts compost, and placed them in a sunny window.
After a week or so they'd shot up to around 2inches tall. But now they have gone a bit limp. I'm wondering if I might be over or under watering them? How often would you recomend that I water them and can you think of any other reason for them starting to keel over?

They want pricking out into individual pots.
Sink them as deep as you can up to the seed leaves if practical.

There is no hard and fast way to explain this; a lot depends upon where they are being grown.
I find that a good soaking after pricking out does for a couple of weeks providing I put them in a cold frame. If I put them in a cool greenhouse they tend to require watering a bit more.
If you find that they want watering every few days they are in too warm an environment.
Will stick my neck out and say about once a week!
But the plant will tell you!!
Get to know what a well watered plant looks like then when you see either the leaves drooping or the pot feels quite light 'water'!!

Is it worth pricking them out before any true leaves have formed?
Mine are also in a seed tray and getting a bit on the tall side.
So that's the prob with mine then, they've gone all leggy and floppy (not damping off) So when they are pricked out they can be buried right up to the seed leaves, burying most of the stem??

Yes. It should help give them a bit of a boost.
