a tried n trusted recipe for a good Harrissa dressing, and also one for a Tahini dressing. Thought I would ask on here before trawling the net! ;D

We buy Harissa, I'm afraid, but we do make a nice tahini dressing. Very simple:
Equal volumes of tahina paste, yoghurt, and lemon juice. Mix to the required consistency, adding a little more tahina to make it thicker, or lemon juice to make it thinner. Peel a couple of garlic cloves and stir them in.
Leave in the fridge for the garlic to infuse. Remove garlic cloves before serving.
We don't add any pepper, or cumin, or salt, or any other spices, but you can experiment with them if you wish.
