We really need to clear some freezer space! Any tips on how to use pumpkin puree. It is just boiled pumpkin which has been blended.
I found a pumpkin pie recipe based on one from Margeurite Patten.
Pumpkin Pie Recipe with Pumpkin, Pastry, Eggs, Cream, Sugar, Cinnamon, Ginger and Cloves.
INGREDIENTS
1 lb (450g) Pumpkin
8 oz (225g) Flaky or Shortcrust Pastry
2 Eggs, beaten
3/4 pint (450ml) Single Cream or Milk
6 oz (175g) Sugar
1 teaspoon Ground Cinnamon
1/2 teaspoon Ground Ginger
1/4 teaspoon Ground Cloves
1/2 teaspoon Salt
METHOD
Dice the pumpkin and steam or cook it in very little water (in order to keep it fairly dry and to keep as much flavour as possible). Sieve of mash it very thoroughly. Roll out the pastry and line a 9 inch deep pie dish. Mix all the ingredients for the filling and pour into the pie shell. Bake in the centre of a hot oven 450F, 230C, Mark 8 for 20 minutes, then reduce the heat to 400F, 200C, Mark 6 for the last 20 minutes.
Serves 6.
Sounds rather nice, but I have to admit I've never actually eaten pumpkin myself. :)
I tend to use mine as a thickening in soups or stews instead of potatoes or flour. It makes a good sunstitute for pease pudding as well.
I make a pumpkin risotto with puried pumpkin, just a basic risotto recipe, add the pumpkin with seasoning, lots of parmesan and chopped sage :)

Thanks for the great suggestions. Yesterday I used some of the frozen puree in a stew and it was lovely! Tonight I may try making a risotto for tea, and maybe even the pie later!
Be careful with the pie, if the puree was boiled it may be too thin. I bake my pumpkin for pies.
Not to put the poster down, but this is not a good pumpkin pie recipe, it is one of the older ones that have the texture of mud, most of them are,,sorry this sounds rude to Den Bee but it is true, I have eaten tons of them. I spent a lot of time working on a better tasting pie, I think I have done it, I have two, one is baked and one in dream pie with a ginger crust with a gelatine set.
Oh Dear this never comes out right but pumpkin pie in the UK is not common and it can be lovely.

The risotto was great - made with chicken stock, homemade cider (instead of white wine), rice, butter, onions, garlic, 1 cubed sweet potato & sweetcorn. With added cheese and chopped spring onion added before serving.
Jeannine, you're not being rude at all. I bagged that recipe off t'internet, and I did say I've never tried pumpkin myself. The only ones we've ever bought have been to make lanterns with for Hallowe'en. :)
Since I'm growing some this year, when they're used for cooking do you peel them thickly to use the flesh, or just scoop them out like with lanterns, except a bit nearer the skin?
Add some crushed amaretti biscuits and use as a raviolli filling.Yummy and dead posh tasting.

I am eating Pumpkin bread at the moment, and it is one of my favourite homemade breads, producing a bread with more substance than normal bread. I make mine in a breadmaking machine but you could make it by hand.
Just take a standard white bread recipe. Add one cup of pumpkin puree but cut the amount of added liquid by half, to take account of the water already in the puree.
I also add a handfull of chopped dried fruit, 1 tsp of nutmeg or mace.
I replace the sugar in most recipes for malt extract instead.
