Title: Chard Quiche for Aqui!

Chard Quiche
2 Tablespoons shallots or Spring onions minced
1 Garlic clove minced (optional)
1-2 tablespoons butter or olive oil
10 oz chard, washed, stemmed and chopped
Salt and  freshly ground black Pepper and freshly grated nutmeg

For "custard"
3 Eggs in a measuring jug, make up to 12 fl oz with either milk or cream, seasoned.
Grated swiss cheese, (or cheddar)......I use about 2 oz
A 9inch flan case baked blind.

Preheat oven to 375F.Gas 5
Sautee onions in oil or butter until soft, add chard and stir until tender over a low heat. Season and let cool.
Strew the bottom of the flan case with cheese saving some for the top. Mix chard with custard and pour into case, up to 1/4 inch of rim. Sprinkle on remaining cheese and bake for approx 45 mins until puffed and golden brown.
Eat hot, warm or cold......LUVERLY with new pots and salad! ;D
