Title: Bread recipes

Thought it might be worth starting a new thread for favourite bread recipes - I know there are plenty out there! 

Here's the fruit and nut one I have just done.

330 ml water
3 teaspoons oil
1 teaspoon cinnamon
1 tablespoon brown sugar
80g raisins
80g nuts (I used half pistachio, half sunflower seeds)
teaspoon salt
460g flour
4g yeast

Setting - Sweet Bread Programme - this takes just under 3 hours with three rises. 
Small loaf (900g), dark crust

And our standard wholemeal loaf - this makes a 1.1 kg loaf (quickly became a firm favourite with us)

330g of wholemeal bread packet (ours is from Lidl)
320g plain white flour
450 ml water
1 teaspoon yeast

Normal bread programme - takes 3 hours 40 mns I think.
Large loaf (1.1 kg) dark crust

Looking forward to trying some more   :P

one of my favies
Cheese and herb
3/4 cup of water
1 tablespoon basil flavoured olive oil
1 tsp salt
2 cups bread flour
1 tsp yeast

when it goes bing
2 tbspns fresh chives, chopped
2 tbspns fresh parsley, chopped
2 tbspns fresh basil, chopped
1/2 cup parmesan cheese, grated
1/2 tps ground black pepper
1 cup mature cheddar, grated

Sorry Springbokgirlie - I've modified my recipes, but I don't know whether different machines have different programmes.   ???

Just what you use will be fine, i found with my recipe book the settings are pretty standard to all machines.

Ie: 

Basic
1lb Loaf
meduim crust
start

etc

Are we talking machine or by hand.

I love Maltese bread which I make on good days by hand but rarely.

Jeannine - I was talking about bread machines. I don't have the strength in my wrists for the kneading necessary. But couldn't the recipes be the same for both?  My machine can be programmed individually - in other words, I can put in the number of times to knead, the number of times to rise, the time needed to bake etc.

Well for most, but there are a few that it won't do.  I do have some good machine recipes though so will dig some out for you XX Jeannine

About 20 odd years ago we had a bread strike......does antone remember? I had to bake bread every couple of days for my young growing family.

It only took a couple of goes and it was superb, though I say it myself.

But now? No way, I dont have a machine I do like to do it the old fashioned way. I have lost the knack, it always tastes so yeasty and I would so love to get it like I used to :(

Just think of all the bog roll the OH uses, you find it in you to really knead that dough ;D ;D ;D

I remember a bread strike before I went to Canada in the 70's, I seemed to make bread for all the neighbours.


If anyone has access to sprouted wheat flour I have a smashing recipe.

star are you using dried yeast?
i bet you used to use fresh,  imho it makes a lot of differance

I agree with this and you still can get fresh actually Tescos give it away for free, they are not allowed to sell it but if you ask for it in the bakery deparment they will give you some.

Now why did I not try Tesco? I asked at Morrisons, they said it was not their policy to give or sell fresh yeast to customers :-\

 I sometimes use this company which do let me order and they deliver, in bulk of course

they have the Bradmalt flour I have mentioned before although I do get it mine straight from the mill

They also have fresh yeast which will freeze.


I buy quite a lot from here especially baking stuff for icing cakes etc

from my bread making recipe book, for any bread maker
1 1/4 cup of tepid water
1 tsp salt
3 tbspns olive oil
3 cups white bread flour
1 tsp yeast
I also add some celery seeds  ;D

yes, it makes 4 bases, when the dough programme finishes, take it out,knead it for 2 to 3 minutes,  cut in 4, flatten it or roll it out and bake in a very hot oven..these are good to freeze as well  ;D

Would any of you know where on the High St I can buy malt extract for a malt loaf.  I can find it online but nothing in the supermarkets?  Is it the same as brewers malt extract? (Sorry if it's an obvious "Yes"  ::) )

Possibly even Boots too, if H&B are out of it?  They do brewing supplies.
