I know it sounds very weird, but it is the most gorgeous cake ever, it is so moist and best I have tasted so far, give it a try.
Chocolate Mayonnaise cake
Serves 8-10
Cake ingredients:
275g (9 1/2oz)self raising flour
225g (8oz) caster sugar
7.5ml (1 1/2 tsp)Baking powder
200g (7oz) regular mayonnaise
60ml (4tbsp)cocoa powder dissolved in 225ml (8fl oz)boiled water 5ml (1 tsp) vanilla essence
Frosting:
175g (6oz) green and blacks fairtrade dark chocolate with 70% cocoa solids broken into pieces 250ml (9floz) double cream
1) preheat oven to 180deg C, 350 deg F, gas mark 4.
grease and line a 23cm (9in) loose bottomed cake tin.
2) using an electric beater, beat together cake ingredients fr about 2 minutes, until well combined. Spoon into tin. Bake for 35 mins, until well risen and when a skewer is inserted in the middle comes out clean.
Remove from heat Allow t col in the tin for 10 minutes. turn out onto a rack and allow to cool completely.
3) place chocolate and cream in a saucepan and heat gently, stirring occasionally, until chocolate is melted. remove from heat and allow to cool for 5-10 minutes. Pour over cake and spread over the top and sides. leave to set.
Using mayonnaise sounds an extremely interesting way of getting eggs into the recipe. Could possibly even be powdered egg as this is used in some mayonnaise - a WW2-USA hybrid recipe perhaps?

Mayonnaise cake is probably one of the moistest & richest cakes you will ever try. The idea was that fat, eggs & milk were difficult to get hold of & store so mayo was used instead this was misleadingly called an egg free or fat free cake. There are hundreds of variations on it.
You can use light mayo but the texture isn't right although it is still good it doesn't compare to the real mayo version.
Nobody knows where the recipe originally came from but it was definitely already around in WW1 as I have known people who remembered eating it then.

Chocolate Mayonnaise Cake
Ingredients
12 oz Sugar
1 lb Flour
2 Tbsp Baking Soda
4 oz Cocoa
8 oz Mayonnaise
8 fl oz Warm Water
1 teaspoon Vanilla
Method
Sift together flour, sugar and cocoa.
Stir in the mayonnaise.
Mix baking soda in the warm water with vanilla. Combine the two.
Bake in two 8" greased & floured cake pans @ 350°F/180°C/Gas 4 for 25 ~ 30 minutes or until done.
Let cool compeletly. Frost as desired.
I actually got it from a friend ages ago cause her daughter was allergic to something so they found this recipe and I have never made a normal choc cake since then
