Anybody have a recepie for Lovage Cordial??
I am growing lovage from seed this year and as I am visiting Finland (where they absolutely EAT-IT-UP!!) I though that I would bring some homebrew cordial with me.
Last year, I brought some Elderflower cordial..........it went down a treat!
Elderflower cordial is gorgeous stuff. Never tried lovage though, I guess its probably made the same way? But Im only guessing, you'll have to ask the Fins how its done and let us know :D
There is a recipe on this site

XX Jeannine
I found a couple of others...curious that they refer to lovage root. The recipe Jeannine found doesn't specify. I use lovage quite a lot and have only ever used the leaf and stalks.
1. Lovage cordial
Coarsely chop an ounce of cleaned lovage root, a quarter ounce of fennel root and a quarter ounce of celery root. Place the chopped roots in the bottom of a one-gallon demi-john and add six pints of spirits of wine (the old recipe), vodka (gives the best herbal flavour) or brandy (gives the most complex flavour). Don’t use the best quality spirits, but don’t skimp too much either. Leave the herbs to macerate for a fortnight. Strain through muslin into a pot, then stir in two pints of cooled sugar syrup (2lb of white sugar dissolved in two pints of boiling water). Bottle and cork securely.
Use about a fifth of a glass of cordial to three-fifths chilled water and one-fifth ice, but adjust to personal taste. Be very wary of going too strong however.
2. Lovage Cordial.
For 20 galls. Take of the fresh roots of lovage, valerian, celery, and sweet fennel, each 4 oz.; essential oil of caraway and savin, each 1 oz.; spirit of wine, 1 pt.; proof spirit, 12 galls.; loaf sugar, 12 lbs.; Steep the roots and seeds in the spirits for 14 days, then dissolve the oils in the spirit of wine, and add them to the undulcified cordial drawn off from the other ingredients; dissolve the sugar in the water for making up, and fine, if necessary, with alum.
Not a recipe but an idea.....
Raspberry & Lovage
Raspberry and Lovage Cordial is inspired by English country hedgerows and has a rich fruity aroma to compliment the tart taste of the raspberries.
Great stuff!
Thanks for that. The lovage seeds are in for germinating now, so it will be a few months before I get to try these.
How and ever, Ill be well prepared with all of these recepies.
Many thanks to all!
