Title: Tsatziki
Post by: Curryandchips on January 27, 2008, 18:10:13
1 cucumber, finely diced
greek yoghurt
lemon juice
4 cloves garlic

Blend the ingredients in a suitable bowl, adding enough yoghurt to make a creamy mix. Lemon juice is also to taste, and salt and pepper may also be added to taste. Allow to cool well.

Serve with crusty bread, and olives ...

Nice with a bit of Cumin - Indian influence?

Of course, but the cumin is in another dish - see the mushroom balls ...

Pedantic greeks may get upset at altering their recipe though, so I would relabel it raita in order to keep the peace  :)

Which method is adopted, it has a genuinely cooling effect on those tortuously hot days ...
