Title: What to do with Pumpkin Puree?
Post by: dtw on January 24, 2008, 00:09:14
I have some pumpkin puree in my freezer which I made last year.

What can i make with it? (bearing in mind my oven is broken).
The hobs & grill still work and I have a microwave with grill feature.

Would a soup be too sweet?

I can't say that I've eaten pumpkin before, so any ideas would be great, as I don't want to throw it away.

Pumpkin soup is delicious, and not too sweet if you put in some garlic and some hot spices!  Or try it with butter beans and herbs.

I have a delicious recipe for pumpkin tiramisu - no oven needed there either, let me know if you'd like the recipe.   :)

You could make pumpkin fritters with them, as well as the usual soups.  You could also make pumpkin gnocchi or pumpkin tortellini.

You could even make pumpkin flour by dehydrating the puree in a low oven - you can then use that as a thickener for soups/stews, etc.

I think I'll try the butter bean & herb soup, I'll put the beans in to soak overnight.
Maybe some pancakes too.  :D
