I never waste black banana's.  They taste better and I bake a Banana Loaf with them.  Doesnt last long though :)

really well ripened bananas, that are almost black are very good for you, mixed with yogurt, they are especially good for the keeping the intestines/bowels in good condition, lots of 'friendly bacteria'  ;D

If you want real ice cream, go with Nigella.

For this one, peel, freeze overnight, thaw 20 min, cut into 2" or so bits, process till creamy.

I actually buy them like this deliberately, usually reduced in morrisons, 8 for 39p..saves waiting  ;D

No way Tim, the following is a great recipe for using up blackened bananas:-

JAMAICAN TEABREAD

4 oz butter or margarine
8 oz soft brown sugar
2 tbsp water
12 oz self-raising flour
2 teaspoons ground ginger
2 eggs beaten
2 ripe bananas, sliced
1 oz granulated sugar

Melt fat in a saucepan; add sugar and water, stirring until sugar dissolves.  Allow to cool.

Place flour and ginger in a bowl and add melted mixture to the flour.  Add beaten eggs and combine ingredients thoroughly.  Fold in sliced bananas.  Turn mixture into a large (2lb) greased and floured loaf tin.  Smooth top and sprinkle with granulated sugar.

Bake at 375oF, 190oC for one hour.  Leave to cool.  Serve sliced with butter.  (Makes 15 â€" 20 slices


I think the temperature could be lower, and if the topping gets a bit dark (aka caramelised) cover the top of the loaf with tinfoil.

With regard to the banana ice cream, James Martin (in his puddings/desserts) series on TV, froze banana slices, and then whazzed them in a food processor with greek yoghurt, for instant ice cream.

How long do frozen bananas last in the freezer?  Just thinking about having a ready supply for instant banana ice cream!

No blackies thrown here either. Tea bread usually, but I like the ice cream idea.
Also with grandaughter at the weaning stage, these are far better tasting, mash easier and must be more easily digested than the yellow ones.

Tim, whacking a frozen banana in a blender for ice cream is quicker than making proper ice cream and the children can do it for themselves!!!
Having said that I made some pretty good quince and calvados ice cream for Christmas!

...and now I'll leave you all to talk about black bananas - under-ripe and still green are the only ones I like..

:o  but I feel the same about ripe ones, Rob. And no, Tim, wouldn't waste them by cooking them....dark rye crispbread, salted butter & 'green' banana on it (not that the flesh is green, mind ;)) = bliss! And, in fact, after a trip to Aldi with green bananas on my mind, bought the perfect bunch of mini ones, and lunch was lovely 8)

Agree, tho, that a mashed ripe banana is great for babies & seem to remember that Gerber used to do a banana & pineapple pudding in a jar? Much too nice for the baby. I got hooked on it.
