Title: Uses for frozen beans?
Post by: caroline7758 on January 10, 2008, 16:50:53
I have a lot of frozen beans, mainly french, in my freezer. When I cook them alone they seem to have lost some of their taste and are often very watery. Can anyone suggest ways of cooking them, either alone or in recipes, which will be nicer, please?

I hope someone answers - I've got a lot too. I dont think I'll freeze them next year - just give the surplus away. We have been using them in curry type recipes as the taste matters less.

I've had a lot too - either steam them or quick boil them, then drain them and add a clove of garlic, ground pepper and a small piece of butter.  That seems to revitalise them!   :)

My standard treatment for frozen beans is to make a very spicy tomato sauce and cook them in that.

Another dish that they work well in is a mix that goes well with Sunday dinners (of the roasted variety) - mashed green beans, potato, onion and tomato.

My standard way to preserve green beans is as a curried bean preserve (which is delicious).

I only freeze french I don't get on at all with frozen runner beans. Like other like minded folk I do use in lots of curry/hotpotti/casserole type dishes always cook from frozen. the other method I use is cook in frying pan in a little olive oil with added garlic puree once they start to cook in own juices I will then add either the sauce (for pasta etc) or a drop more liquid lots of salt & pepper and cook at high temperature this sort of steams. My OH will eat like this and he hates frozen veg. so can't be too bad

There is a great US recipe that uses frozen green beans as part of the Christmas day dinner, really dresses them up, very traditional. I will try and find a recipe for you XX Jeannine
