Have just made celeriac soup which is usually lovely this time however the stilton overpowers. :o There is cream and milk in the recipe which I have increased but to no avail any ideas on how I can retrieve without making another batch! I'm hoping Baccy Man is there to help
About the only thing I know about soups is that if they are too salty, dropping in a raw peeled potato and cooking it will reduce the saltiness, just remember to discard the potato. It might do to absorb strong flavours as well...
Stilton is difficult, you have already tried the right thing which is to increase the quantities of any other dairy ingredients. The only other solution is usally to dilute it either by making another batch minus the stilton & combining the 2 or by bulking up what you have.
It would help if you posted the recipe. A basic celeriac & stilton soup recipe goes along the lines of onion, celeriac, vegetable stock, double cream and stilton.
Other things that might be included would be cauliflower, mushrooms, white wine or cider, apple or pear.
If there is anything here not currently included then you could try adding it that would change the flavour and increase the overall quantity which would dilute the stilton taste as well. Cauliflower is good for bulking up because you can usually add up to 2lb of it to a batch of soup which helps a lot with dilution but it doesn't have too strong a taste itself. Adding some cider & an apple introduces a new strong flavour which can compete with the stilton but without tasting it it's difficult to say wether that would be sufficient in this case.
If you post your recipe I can try to be more specific with my suggestions or you can try one of the above.

Thanks to you both Rob & Baccy Man for your suggestions, It was the usual recipe of onions celeriac stock milk cream Stilton. I didn't want to go down the route of making another batch so I tried adding the Cauliflower and added the odd potato for good measure I removed the potato but left the cauli in and it did the trick! frozen the portions un used and looking forward to enjoying over the coming weeks. Lesson learnt taste as you go not all Stilton is the same strength- Many thanks
