Does anyone have a recipe for a parsnip and onion flan?

oooooo I do hope someone has because it sounds wonderful!

couldn't you just make it up - sort of like a quiche but using parsnips & onions? :)

For some reason this sounds really weired to me, I do lots of things with parsnips (veggie through & through) but can't imagine eating them in a flan style way - if you do try it I would be interested to hear what you think.

I would do have tried as Hot Potato suggests, but while browsing just now I came across a really interesting site and they had this Parsnip and Leek Bake:

The whole Riverford site seems interesting - putting it in my favourites!
