Title: Freezing mushrooms?

How? I see packs of sliced mushrooms in freezer cabinets....would one blanch them first? And would they be any good for, say, pizza toppings?

Bit silly, I know, impulse-buying a kilo just before I go on hol....but a mushroom fancier's gotta do what a mushroom-fancier's gotta do :-[  Haven't really got time to cook them into the sort of dishes I'd use them for, but if needs must...

Not too sure on this one but I dont think 'shrooms freeze well in the raw state, I would be tempted to blanch, but not sure if blanching in oil or water will give the best results.

Stalks, no probs....make a mean curry base out of the stalks 8) but will give the blanching option + lemon juice method a try tonight.....after I've eaten pasta with a mush-based sauce tonite..... :)

V. many thanks again..... and at least it's got my tonight's alternative to TV sorted out ;D

......so you do what, Tim? Just freeze whole in bags, just like that? I want to slice, cos that's how I'll be using them, but they don't go all slimy when thawed?

PS got tonight's supper sorted - and yes! it's mushroom based ;D

Yes - in paper bags.

Slimy? Not really. Wet, as if you had washed them. Thaw on paper towels.

Did this just for you, Lishka. Except that I do need them for Coulibiac tomorrow evening!

I do the same as Tim, frozen whole in paper bag.  There are fine once thawed out.

Why don't russians call 'fish pie'...fish pie? Seems silly to use unpronounceable words when there are perfectly sensible and succinct ones they could use.... ;D

there are various spellings, one is kulibyaka, and the authentic fish should be sturgeon  ;)
