Title: What to do with garlic?
Post by: twinkletoes on October 26, 2007, 11:56:41
I have a jar of garlic cloves in chilli oil.  Do you think I could roast the cloves?  What would I do with them then?  Any other ideas?   I used some of the oil to coat some steamed PFA wedges sprinkled with rock salt which I then slammed in the oven to crisp up - yum.

i would crush a couple and use to put under the skin of a roasting chicken with a bit of butter yum!!

You might also try making some bread dough with the chilli garlic roughly shopped into the dough then it just needs to be toasted and buttered? This dough can also make nice rolls for spicy salad sandwhiches :)

Are they your own or bought ones?

You have to be very careful with garlic, as it contains/produces botulism when its stored this way. I dont want to scare you. Im sure someone far more experienced in processing and food storage will give you a much more detailed outline on this.

I will add, I did this too and was really warned off on another forum.....please wait for a reply from someone else or have a google on 'garlic in oil'.

Think I should be safe Star.  Have been reading recent threads about putting garlic and chillis in oil.  This was a shop bought jar.

roasted garlic is divine, so sweet and rich, mix it with anything - I know folk who like it spread on toast but they don't get kissed for a month  ;D

I buy these every time I go to Denmark!

Eat the cloves whole, they are fab.  Put the oil on salad and some whole cloves too.  Crush the cloves and use anywhere you would use garlic.  Put whole cloves in pasta / couscous.  Basically anything that needs a bit of garlic and a little hint of chilli is great.  I ues the oil to fry things that need a bit of extra flavour.  They don't roast very well, tend to dry up a bit but in with the meat is also brilliant.

Enjoy :-)

Mainly that I can't find it over here!  In most supermarkets you get 2 choices, one with herbs and oil and one in chilli oil.  I get both, we use tons !  They are also very reasonably priced, IMO.  The nearest thing I have found in the UK is garlic in white vinegar - nowhere near as good.

Where abouts are you going Cambourne?

Thanks for that Tinkie_Bear.   Now I don't think I'll have enough to try all the things you suggested!  :'(  BTW - I got the jar of garlic from our local £ shop.

I was there a couple of weeks ago, nice city.  A visit to Rosenborg Castle where they keep the crown jewels is well worth it, if you have time.  Also worth watching is the changing of the guard, happens at 12 - the march through the streets to the pallace. Nyhavn is very touristy, all menu's are in English but that does make life easier! Also if it's open go to Tivoli, sadly it was closed last time we were there :-(

Have a great time.
