It is what the French call mache (with a circumflex). I grew it once and was rather disappointed, finding it flabby and tasteless. I suppose it is good for bulking out a crisp green salad. I like eating it in France.

I don't know why people say it is bland! It is a very tender leaf, grows as a little rosette close to the ground. But it does take a while to germinate, be patient. Pick it when it's about 2 or 3 inches high. Wash it very well, I slice each rosette vertically to get out all the dirt.
Here is THE region where it is grown for most of France, so we eat it a lot!!!
Best in a mixed salad with hard boiled egg, and beetroot. But also nice with walnuts and cheese.
Needless to say I have already sown a patch and the next one will be sown this week  ;D
