Are you making chutney Tim? If it is I did the same, I chopped all my ingredients for tom chutney and ended up with enough stuff to put in 2 pans!

Tim when you doubled up how did you calculate the new cooking time??

If one batch is approx 1h 30 min what would a double batch be?
