Title: red onions shooting - what can I do?

My red onions I grew earlier this year were well dried before being put away in a cool(ish) dark(ish) place, but I've just noticed that some of them are starting to sprout.  Is this because they are not in a dark enough, cold enough place? What can I do with them now?  I guess I can't replant them - or can I?

I think I read on another post somewhere that if you replant them, they will bolt. It sounds like the dark, cool place is not dark or cool enough but also not dry enough ;)

Im sure if my advice is wrong it will be corrected pronto.

You probably didn't let them 'die off' properly before you harvested them.

Did you leave the shanks on - you're supposed to.

And what does 'earlier this year' mean - onions are only supposed to be ready at the earliest in August. If you plant them earlier you haver to eat them earlier!

Get yourself a flack jacket and hide behind the runner beans until they run out of ammo. Alternatively, sneak around the back and  make a dash for the shed.

I left the stalks on (shanks?) and dried them outside (in the sun - it gets very warm and dry down here in France in the summer)  for at least three weeks!  I suspect it could be the not so dark and cool shed they are being kept it now.

Sort through them and make sure that all the nice sound ones are clean and dry and store them in a net sack cool but frost free. The rest should be used up asap.

you can chop and freeze onion for use in soups and stews. could be a way of saving the crop??
