had ameal out at the weekend with panacotta and soft fruit  as desert
never tasted it before, yumeeee, cannot find the recipe, has anyone got one
(as easy as pos. ::)).   heres hoping gnan.

Easypeasy.  "Panna Cotta" means "cooked cream" and that's all it is

500gr cream
125gr caster sugar (I use less because it makes it too sugary sweet)
vanilla essence
gelatine (the amount needed for the amount of liquid)

Put cream sugar and vanilla into a saucepan over a low heat and stir until almost boiling and the sugar is dissolved.  Remove from heat.  Dissolve the gelatine in some water or milk and add to the cream mixture.  Retun to the heat and stir till boiling.  Pour into container and cool and then chill until set.

There are loads of variations to this - you can caramalise sugar and put that into the base of the container and pour the cream on top, or a mix of freshly made fruit syrup. The sharper the fruit the better the contrast with the sweetness of the cream. Mmmmmm One of the best from Northern Italy.

thanks asbean, will have a go tomorrow, guests  coming to stay in a fortnight
will make an excellant sweet.         g nan
