Has anybody made vegetable sausages?
I was thinking of buying a cheap manual mincer to give this a go.
I suppose just the vegetables, some breadcrumbs, egg and herbs would do,
but does anybody have any proper recipes?
Glamorgan Sausages?
I found this one for Glamorgan sausages.
2 separated eggs
1 tablespoon grated onion
1 teaspoon fresh mixed herbs
flour for coating
crisp breadcrumbs for coating
1 teaspoon dry mustard powder
6 oz. (1 and a half cups) grated, hard strong cheese
10 oz. (3 cups) breadcrumbs, fresh
salt and pepper
oil or pork fat for frying
Mix together the cheese, fresh breadcrumbs, mustard, herbs and onion, san season well. Add the well-beaten egg-yolks and stir thoroughly. Whip up the whites until frothy but not stiff; sprinkle flour onto a board and form the mixture into small sausage shapes, then roll in egg-white, and finally the crisp breadcrumbs. Fry a few at a time in hot oil or fat. Makes about 20. Suitable for vegetarians. The Welsh name for Glamorgan Sausages is Selsig Morgannwg.
A bit too much cheese for me, I was thinking along the lines of a 'Linda McCartney' sausage.
I may have a go at butternut squash sausages, using some mashed squash instead of the cheese.
If they don't fall apart in the frying pan, I'll post a picture here. :)
That Glamorgan soss recipe's really good. Didn't know they had a 'name', but do something v. similar. I use, say, 3/4 hard cheese, 1/4 parmesan tho AND I shove in some freshly minced chilli for a kick...no surprise there...I put chilli in most things I cook 8)

you can suppliment some of the cheese for something else wet like a little potato or squash.
You can suppliment some of the breadcrumbs for something dry and absorbant.
Personaly i think i would add a dollop more onion and a tiny bit of garlic as well as a little re-consituted sun dryed tomato.
DTW do these freeze??
I love veggie sausages but there so expensive!!
If you want more of a Linda McCartney sausage why not try adding some rehydrated tvp?

tvp is "textured vegetable protein" I think? but it is made from Soya beans no monosodium glutamate. I can't stand the stuff ???whatever I do with it it always tastes the same it has a taste that transends everything, the best one I have come across is the Vegemince that is frozen and comes in a resealable bag. But for me the unflavoured quorn seems to be most versatile, tastes on nothing so will absorb flavour of choice easily, although for some people it has the unfortunate side effect akin to Jerusalem Artichokes be warned ::) ::)
I suppose it defeats the object! but a little TVP will help bulk out the mix, used it once to make veg Shepherd's pie but YUK! OK in small doses though especially for texture

I made some butternut squash sausages using the recipe above, replacing the cheese.
They butternut squash was cooked, drained well and mashed before adding to the mix.
I rolled them in oatmeal instead of breadcrumbs, and fried in shallow oil.

do they freeze?
I put some in the freezer (cooked first) and they seem quite solid. ;D
I put most things in the freezer, I don't really know the 'etiquette' for
what will freeze and what won't.
I suppose it would be advisable to defrost them first before reheating
under a grill though.
I'm going to have a go at making other sausages now that I've succeeded at these.
I'll try some cooked mixed beans (mashed) and some with beef mince.
Some different herbs and spices too.

you can make 'sausages' out of just about any veg, all you need to do is mix cooked chopped up veg half and half with something like potato, squash, mashed beans. shape it how you want, then dip in water and coat in oatmeal/breadcrumbs (or flour then egg then bread crumbs)
chuck in some herbs and seasoning, they are delish.

.....but don't forget to add the dry mustard powder and fresh finely chopped herbs and whichever spices you like to turn them into something really special 8)
