Title: Patty pan squash - help
Post by: Suzanne on September 29, 2007, 18:26:32
I buy in an italian deli little patty pan squash stuffed with cheese and marinated in oil. I have grown patty pans this year and have losts of little baby ones which would do beautifully for this recipw. Only problem i have no idea what i need to do - i think the patty pans are blanched so they absordb the dressin. But does anyone have a recipe that might fit the bill?

Thanks
Suzanne

If all else fails might be a good idea to get cheeky and ask the deli owner for the recipe!   :D

--- and if you get it please post here as I have some that are a little large and need the pickling treatment. ;D ;D ;D

Suzanne,
if jitterbugs great suggestion doesn't work..........

I would follow a recipe for marinated mushrooms and substitute them for the squash. They have a similar texture and absorbency!
Something like this perhaps?

Though I think cooking for 10 mins is a bit too much unless you want them mooshey, and I woould add some herbs & garlic into the oil too!
