Title: Pork chops
Post by: keef on September 28, 2007, 15:47:57
Why do supermarkets now only sell pork chops with most the fat and skin cut off, even the economy ones ?

cos thats what the average British housewife wants. They have never tasted real pork, wouldn't think of eating a loverly bit of belly with cracklin on top. The beef is the same now days, no fat so tasteless and tough.
and can you even imagine eating roast lamb without the crispy fat on it?
the modern way of eating I'm afraid. so long as it is quick and you don't have to chew it. Yuk.
A couple of years ago I was invited as a Local Councillor to look round a meat processing factory. I haven't eaten anything processed since. Sausages made from slurry which itself is made from every bit of the pig including bone, burgers made from the most revolting meat that you would not normally look at. all sorts of colouring and fillers put in. Yuk again.

I was told by a local farmer that a lot of the older breeds are the fatter ones. So his favourite, the Wessex Saddleback, which grows a lot slower than the British Landrace/Large White combo's that are normally grown, would be of no interest for normal intensive farming.

He sells Pork chops with inch thick fat, which can make grown man cry.

The fat used to be a valuable byproduct for ice-cream, but is less popular these days (since they had to put ingredients on labels!).

We were not farmers but when we were lucky enough to have some land we kept a few bullocks, 6 sheep and numerous pigs (Charlie was an animal lover) and the taste of all was superb when we had one slaughtered for our own use. Mind you we had to tell the children we were eating one of our neighbours animals otherwise they wouldn't eat it!! I never seem to be able to buy tender pork chops these days.

In the end i bought some from a game butcher near us, i assumed they'd be expensive, but i got 4 big chops (1.17Kgs in total) with good bit of fat on them for £4.15. Tasted much better too.

keef, if you want decent meat you do not buy it from a supermarket!!  You go to your local butcher or farmers market or farm shop.  You pay more, but the added bonus is 'taste'.

Off to Bakewell Farmers' Market early tomorrow, followed by Chatsworth farm shop.

Drooling already.

May even come back via Hartington and get a nice bit of blue Stilton, or even Wensleydale (grommit)

Gave up on supermarket pork a while ago - our local butcher gets free range pork from Blythburgh, Suffolk which is lovely. He also gets special smoked bacon from Suffolk as well. It comes in one piece so he cuts off the slices for you - it makes bacon and eggs really special!

QuoteYou pay more,

that's not always the case, supermarkets enlarge the price of the pack, not the price per kilo, they are a lot more expensive than you think !  ;)

Just checked out of interest, and the proper chops i bought from the game butcher were cheaper than Tesco's.

Butchers chops where 3.55 per kg, accourding to Tesco price check a tray of Tesco value chops sell for 3.62 per kg...!

He knows that!  Don't be too hard on Keef, his job means he has to spend a lot of time in supermarkets.

As to the farm shop he's on about, we all assumed it would be very pricey, but I eventually went over there for some bacon bits and was amazed at how reasonable the prices were ..... The rest is now history.  (http://bestsmileys.com/eating1/15.gif)
