Title: Marrow & Ginger/lemon Jam

Marrow & Ginger Jam

1lb Marrow(after peeling) Cut into cubes
Sprinkle with 1lb Sugar and leave overnight.
1 level teaspoon ground ginger, or 1-2oz crystalised ginger chopped finely
Juice 1 large Lemon

Put marrow/sugar and lemon juice in a pan, simmer gently stirring all the time until the sugar has dissolved.
Add ginger & boil steadily until the marrow looks transparent and the jam sets.
Put into sterilised jars and finish as per usual.

Marrow and Lemon Jam

Juice and grated rinds of 2 lemons.
Sprinkle with 1lb Sugar and the lemon rind and leave overnight.
Put marrow, lemon rind and suger in pan, simmer gently adding lemon juice, stirring well until the sugar has dissolved.
Boil steadily until set.
