Set myself up this morning to make a double quantity (first mistake) of the River Cottage Chutney recipe posted 8 Aug. by adamhill100. Massive quantity kept sticking to the bottom of the pan eventually burning :-[ :-[ I transferred what I could to a clean pan (without scraping bottom of pan) and picked out any black bits floating to the top. What do I do now?, if I trs to jars will the chutney end up being bitter? would I be better off throwing the whole lot away? all those lovely ingredients :-[ are their any "dab hand" chutney makers out there that can come to my rescue? The chutneys is cooling and the jars are in the oven HELP :-\
Hi - I am new to this chutney lark myself but have made the River Cottage stuff - I think the test would be 'how does it taste now'? If it tastes burnt I am not sure you can do much but if it tastes ok now I would put it in the jars. I think it tastes a bit bland - hope it gets better with time.

Hi Gwynleg-I don't know what it should taste like but it tastes a bit vinegary, all I can think of at the moment is what a waste of all those lovely veg. and double quantity ??? that will teach me! I'll try and muster up enthusiasm for another taste. Thanks for your help.
Bottle it anyway! nothing to loose! the vinager taste will mellow out anyway after about 2 months

I made a batch of red onion marmalade a month or so ago, and it smelled awfully vinegary while we were making it so i shoved it in the fridge for a couple of weeks. Apparently, when the OH threw it away, (on my instruction) it smelled okay ::) so I'd say bottle it and give it a go, nothing to lose now!

It's supposed to smell/taste vinegary at this point, it'll be fine, jar it up and leave it for a couple of months and it will be GORGEOUS!!! :P
Thanks everyone I took your advice and bottled up- not very optimistic when I was doing it, I was down in the dumps and cross with myself for being so stupid :-[, but do feel better about it today, as you all say nothing to lose and once again I feel good about having so many people to turn to for advice/support that in itself lifts the spirits - what a difference a day makes. :)
