Title: Chili Chutney Recipie

Chilli Chutney

Found this, looking forward to making some of this over the weekend

Ingredients:
about 7 small chopped chillies
2 large onions
100ml of malt vinegar
half a teaspoon of garam masala
4 table spooons of brown sugar
1 clove of garlic
500 ml of water

Method:
Add all of the contents except the vinegar to a saucepan and bring to the boil. COver and simmer for about 30 mins.

Add the vinegar and simmer with the lid off for a further 20 mnutes to reduce down some of the liquid. Place in clean jars and boil to steralise.

This stuff is superb and is delicious served with cheese & crackers and sandwiches/toasties.

An emergency has arisen  :'(.

Searching for something else in my freezer this morning, I inadvertently left out a container of 500g of Inferno Red Peppers from last year. They are currently residing in the fridge as, with only one hand available, I can't do much till Gordon comes over tomorrow to do the chopping and peeling.

Please tell me what I can use them for - a chilli jam maybe? I have lots of plum tomatoes, red onions and ripe Jumbo and Gypsy sweet peppers.

If someone could lead me to some recipe ideas I would be grateful.

Tricia, if they have defrosted and that is what is worrying you, cook them then bung them back in the freezer and they will be fine, it is OK if you change the form they are in, you can then re freeze.

Thanks Jeannine - why didn't I think of that? Cooked they will take up less space too. It will be some weeks till I have the use of my left hand again, so refreezing them cooked is the best solution - thanks again.
