How big should these be for best eating??

I agree with Calendula. I pick mine anywhere from 50p size up to flying saucer size! When tiny I cook them whole or eat them raw. As they get bigger I sometimes cut the tops off and stuff them, or slice them and use like courgette or chunk up and bung in tom sauces and stuff or shred finely on my mandolin and use in salads.

I use mine small, unless of course I miss them, they do tend to lose taste as they get really big. Personally I think about 2 1/2 -3 inches is big enough and I stick to that if I have loads, but if a bit scarce I might leave them a bit longer.
They look good Tim, looks like white custard/scallop.
Sometimes if they get bigger,I slice them across like you would a bread roll, steam lightly or pan fry ,top with a slice of ham, thin slice of swiss cheese,under the grill to melt a little then cover with Hollandaise sauce.Bit like Scallop Benedict you might say!!

I got some of these in the seed swap and have tried steaming then mashing with butter But I have scooped all the seeds out - THey are pretty tasteless though. Is this correct or does everyone else eat the seeds as well?

Eat the seeds, they are quite soft, and yes they are a bit bland, but I think all summer squash are and only use them as a fill in till the winter ones are ready.Some taste better than others but on the whole they don't have too much flavour. Low cal though and good for youXX Jeannine
We roast them quite often - 45 to 60 mins (in half or chunks); it brings out a "hidden" flavour and although still a bit mild, they get more character.
And yes, eat the seeds...
