Please can anyone help me i want to know how to pickle Nasturtium seeds they call them poor mans capers got the seeds of the plants but dont know how th pickle them thanks
Wow I didnt know you could! I would be interested too
Yes you can also use the flowers and the leaves to put in salads but only the small tender leaves as the old ones are bitter you can us almost every thing from the nasturiums
After the blossom falls off, pick the half-ripened (still green) nasturtium seed pods. Continue picking as long as the seed crop continues. Drop them in a boiled and cooled mixture of:
1 quart white wine vinegar
2 teaspoons pickling salt
1 medium onion, thinly sliced
1/2 lemon, thinly sliced
1 teaspoon pickling spice
1 clove garlic, smashed
4 to 6 peppercorns
1/2 teaspoon celery seed
Keep the mixture refrigerated and use the nasturtium pickles in sauces, dips, casseroles, soups, stews and as edible decorations. For an added attraction, freeze 2 or 3 nasturtium capers in ice cube trays and use them to dress up your next glass of V-8 or favorite ale.
or
Pick the seeds on a dry day. Place in jars and fill the jars with vinegar. Pour the vinegar off again through a sieve into a jug. To every pint of vinegar add a ½ ounce of salt and 6 peppercorns. Boil this mixture for ten minutes, then pour back into the jars and seal.
Ready to use after three months, can be used in place of capers.
( I googled and have C & p'd)
Never heard of pickling salt where do you get it from
Pickling salt is available everywhere but may be called other names.. you can use any salt that does not have an ingredient added to make it run well, like common table salt does.
Thanks will try this recipe
