Title: help. I can't resist a bargain..condensed milk
Post by: Jeannine on August 18, 2007, 16:16:28
I am sorting my cupboards ready for packing up for the winter as I usually do in August..I use up old stuff, run down stocks and start afresh.

I have  a ton of light condensed milk in sqeezy bottles, well in date but am wondering if anyone has anything new I can do with it.

If ity was tins I would boil it for Banoffi pie but in the plastic bottles I can't.

I was in a shop a few weeks ago that was closing down and I paid £1 a case of 12 for it ..reglarly £1 .79 a bottle..so you can see why I have so much,I just couldn't walk away. I bought 3 cases!!!

Candy recipes would be good if anyone has any, perhaps I can make it into stuff for a bazaar comong up.

All ideas appreciated.

XX Jeannine

I also bought tinned kidney beans for 2p a can..............lots.

My first thought was tablet Grawc but I have never made it with the lite condensed milk.

Cam, I could pack it into glass canning jars and boil it for 5 hours as I do  the cans but I think for storage is better in non see through pots rather than glass and at the monent I have about 10 boiled cans.

As it happens ... I do have a recipe. It comes from "A taste of Scotland" by Theodora Fitzgibbon and it works well. I used it for pressies for the kids' teachers, coffee mornings, charity sales etc.
NEVER ATE ANY MYSELF!!! HONEST!!! ;D ;D ;D

half pound of butter or margarine (infinitely better with butter imho)
1 pint water
4lbs caster sugar
1 pound tin of sweetened condensed milk (mind you it's so weet I don't know why they stipulate sweetened)

put the butter and water in a deep pan (it boils up high) and melt on a low heat. When melted add the sugar and bring to the boil stirring slowly all the time. When boiling add the condensed milk and simmer for approx 25 minutes stirring to prevent sticking. Take off the heat and add flavouring of your choice e.g. cinnamon, clove, ginger, lemon, orange, peppermint, vanilla, nuts or nothing at all. Then beat very well for 5 minutes. Pour into a greased pan and score into squares or little bars.  I use my jam thermometer. I think it is ready when it reaches the "soft boil stage" on my thermometer.

Sounds lovely.  Will get some made today, as well as EJ's plum bread,

some home-made bread, sunday lunch, a pudding of some description...

Feel worn out already!  :-\ ;D
