For longer than most of you have lived, I have stuffed things with Basmati Rice - because that's what is usually left over. 'Twas only after No2 Next Door left us some cooked Arborio rice that I realised what I've been missing all these years.
So - in future - it's always Arborio!!
I love Aborio rice, it absorbs flavours much better than Basmati. Not just for risotto!
And Arborio isn't the only risotto rice, don't forget Carnaroli and Vialone Nano....

Rice + Garlic & Chicken Stock.
Tomato pulp.
Chopped Chicken.
Shallot.
Tabasco.
Topped with wholemeal Breadcrumbs, a piece of Gruyere & a piece of Butter. Stuffed Pepper recipes recommend that you blanch the peppers - we don't - we prefer them crispy.

HP = In Total Yoghurt/Cream/Tabasco 'dressing'. Paprika. Satisfactory??
PS - the foil in the Pepper dish is to keep them upright.
