Mmm, that sounds good. This one is our favourite - but is simple, so allows for plenty of additions (maybe red peppers, or basil and pine nuts - whatever is to hand).

Put in the bottom of a bowl one chopped red onion and a small crushed clove of garlic, chopped up mint and chives.  Add a good dollop of olive oil, a smaller drizzle of white balsamic vineger, fresh pepper and a pinch of salt. Mix thoroughly.

On top, place a mixture of green and red salad leaves, a few beetroot leaves if available, a handful of rocket. Toss five minutes before ready to eat.  Deeelicious!

Sorry - no measurements - all done by guesswork and what looks right!

In from a day's work and so hungry with little time to faff around...here's my basic, extras thrown in on an as&when basis, depending on what's in the fridge....it's a 'green' salad, so no red tomatoes/red peppers, etc. in it? (tho I go conveniently colour-blind with the inclusion of red onion ;D)

First off.....cube and par-boil loadsov tatties - a must for all my one-dish salads (I'm seriously hungry, this ain't a diet dish, right?)...while hot pour over dressing of o.oil/white balsamic vinegar, lo- salt!!,crushed garlic/mustard powder/shredded green chillies (loads). Tats will continue cooking & absorb loadsov dressing.

Add sliced red onions & mix in.

Boil eggs til bit soft in the middle and grate cheese.

Final assembly.....shred salad leaves, chop big gherkins from Aldi 8) and any green olives you might happen to have,  mix in.....add extra dressing if the tats have absorbed all....add chopped eggs + grated cheese..mix in again.

EAT!!!!
