Yum! Just had this with tea courtesy of Leith's Vegetarian Bible, it was slightly too sweet so maybe teaspoons rather than ounces/tablespoons of sugar :
3 tablespoons pumpkin seeds
1 tablespoon soft light brown sugar
1 tablespoon olive oil
2 onions thinly sliced
30g/1oz butter
30g/1oz caster suger
1 Marrow, about 2lb, peeled, deseeded and cut into 1in cubes
3 tablespoon white wine vinegar (we used balsamic )
1 tablespoon freshly chopped sage
salt and freshly ground black pepper to taste
1) Preheat oven to gas mark 4/180/350. Mix pumpkin seeds and brown sugar together and spread on baking tray. Roast in oven for 7-10 mins or until lightly browned. Remove from oven and allow to cool.
2) Heat the oil in a large frying pan with a lid. Add the onions, cover and cook over a low heat for 10-15 mins until soft but not coloured.
3) Add the butter, caster sugar and marrow to the pan and mix well. Cook for 10-15 mins til the marrow is just tender.
4) Increase the heat and pour the vinegar into the pan. Cook over a high heat til the excess moisture has evaporated and the marrow is lightly browned.
5) Add the sage, salt, pepper and roasted pumkin seeds and serve immediately.
