As a newbie i was realy proud of the massive (to me anyway) courgette i grew, only 2 have my bonfire severly dampened by being told that the bigger the courgette the less flavour. Is this right..

It all depends on the variety and the length of time it has taken to grow. A courgette is really an immature fruit and when sliced should be solid flesh right through without a seed mass being present. They will still be tasty but you will need to remove the central seed mass and fibrous surrounding to leave solid flesh losing most of the extra you gained by leaving it to grow too long.
If left on the plant once the seeds start developing, this can put the whole plant out of further production. This is good or bad depending on your outlook.
And I think it depends what you want them for. I grow lots of plants, some I let get large if I am planning to make a large batch of ratatouille or courgette bread, but if I want them for salads or small servings, then I cut them when they are just longer than my middle finger. Keeps the plants incredibly productive, and as I am really the only fan of them in this house, means I can keep ontop of the glut.
All true. And you may want to stuff them. In which case, the stuffing gives the flavour.
We found one this evening that had grownHUGE (it was hidden under a leaf so had been missed). Lovely stuffed with ragu'.
