Bless him - but are finger chillies not average hot chillies?

Four ounces in that paste? And 3 tbs of that paste for 2 Lobsters?

I put 1/10th of that in for one Lobster & ruined it.

No idea what a 'finger chilli'  is (and I've grown over 40 varieties to date) but 4oz of any chilli would seem far  too much -  4 chillies perhaps rather than 4oz ?

With hindsight, I suppose he meant fresh chillies?
But even that would still mean eight of them which, in so little else, is a bit de trop?

Wow! I'm a serious chilli eater but that's far too much for something as delicately flavoured as lobster where you want the flavour of the meat enhanced not overpowered? Surely an error?

Thanks, Lishka. Just for the book - here's the rest of it.  Including more (albeit 'mild') chilli! HE reckons that - although spicey - the recipe doesn't hide the Lobster flavour.

I didn't say that I used 2 tsp dried Birdseye - the only ones I had - & then only used 2 tsp of the final paste. Just tried to 'dilute' it before saving it for 'next time' but it's still killing me!!

Phew , birds eyes are a bit lethal......I gave some the other year to a friend to cook with as we had grown loads, a few months later he made us a meal and nearly blew our heads off....he had used ONE of our chillies! :-[

Does seem a shame to do that to a lobster - they are such a rare treat I prefer to just savor the natural taste with a bit of lemon - don't really see the need to 'spice' it up.

Don't worry, Mary - we also had one with a delicate dressing.

But I shall bin those chillies - I like to taste my food, not have my tastebuds neutralised!

One of the first conversations I had with a now good friend, - he told me he'd been cooking a meal for friends from a famous chef/restaurant's cook book & it said 4 Tablespoons of Tabasco.  Thinking it had to be wrong, but not wanting to ruin the meal, he phones the restaurant.  Explains to the person who answers, & gets through to the head chef ( not alas our celeb) & has a conversation about the recipe.  Chef agrees it's a typo/mis print.  Confirms tea spoons not tablespoons.

Worth a try?  After all, it's the celeb's public reputation on the line   ;D

I did think my chap was a bit weird at the time, but I've got used to him!
