Title: Plum thinnings chutney recipe please?
Post by: jennym on July 19, 2007, 23:27:44
Have around 10 kgs of perfectly sound green Victoria & Opal plums, gathered when I thinned out some trees recently. Was hoping for a tried & tested recipe to use them up, preferably in a chutney.
If no ideas, will probably bung them in the pressure cooker to cook them until soft then make something up, but would be interested to know if anyone has used them successfully.

last year I got about two dozen plums, warwickshire drooper plus others, not enough to make enough plum sauce on their own. Hence I improvised in the kitchen, adding apples (eaters) plus a couple of finely chopped onions. After stewing, I added sugar, and a dash of vinegar, to balance the tartness (I hate sweet sauces). Finally I pureed the mixture with a hand blender, and put into jars.

I had requests for this sauce after tasting, and expect the same again this year.

Only made plum jam before, but this recipe looks easy for plum sauce:
