Title: Bruchetta

Hello. Don't know if ive spelt it right. Does any one have a nice recipe for the tomatoey bit.

Bruschetta
A very easy one.

12 ounces of coursely chopped tomatoes(skin off)
1 ounce chopped basil
1 ounce Itaian parsley
2 ounces of chopped garlic
4 ounces of parmesan cheese
4 large slices of bread ( I use a herb bread flavoured with basil  that I cut into slices about 3/4 inch thick)
1/4 cup really good olive oil
salt and pepper

Saute the garlic in the olive olive oil,add tomato  basil and parsley, toss for a few seconds only you don't want to cook it, simply warm it through.

Place in a bowl, add parmesan,taste for seasoning and adjust to personal taste, serve on toasted basil bread.

Very simple very good, use French bread if you cannot get the herb one.

I could just eat some of that now....yum sounds delish, :D
