Title: Strawberry glut

Not a complaint, a fact!  Up until my op, I was picking around 4Ib of strawbs and around 2Ib of raspberries every other day!  In the fridge I had 2 huge bowls of strawbs, and there was no way we could eat them all.  The rumtopf pot of mums leaked, so a new one is on order and I will freeze some and make some jam and I made a big jug of smoothie from the really soggy ones, but for a change, mum and I made these.

1/2 cup vegetable oil (I melted flora!)
1 cup milk (or cream if you are feeling sinful)
2 eggs
1 teaspoon salt
4 teaspoons baking powder
1 cup sugar
3 1/2 cups flour
2 cups of chopped strawberries (I probably used about 3 cups)

Preheat oven to 190'c.  Oil muffin tin or use paper cases.
In a small bowl combine all liquid and beat lightly.  In a large bowl combine all dry ingredients, then toss in strawberries and cover the fruit with the flour.  Make a well in the centre and pour in the liquid.
Fill muffin cups.  Bake for 23 minutes.  ENJOY!

Mum and I decided that these, torn open with a dollop of clotted cream would give a Devon cream tea a run for it's money!  They are delicious, and we made another batch using the raspberries.

Sounds delicious. :) But not sure they would do my diet anygood! ::)

Glad to see you are resting EJ  ::) ::) ::), but glad to see you back here too. I'll have to give the recipe a go too - with raspberries and strawberries.

Just made these tonight [half quantity] with slightly mushy strawbs & rasps & they are yummy.  Thank you EJ for the recipe  :)  PS it's gas mark 5 for anyone not electric.
