I've just made some Lemon Curd the easy way and wondered if anyone was interested.
1/2 a cup of Butter
Grated peel and juice of 3 large lemons.
1 cup of sugar.
3 beaten eggs.
plus1 egg yolk beaten.
In a large microwave proof bowl,microwave butter,lemon peel and juice on full power for 3 minutes.Stir in sugar.Microwave for 2 minutes.Stir in eggs and eggyolk a little at a time.Microwave on low power for 12 to 15 minutesor untilcurd thickens,stirring occasionally.
Ladle hot curd into hot jars.Cover and leave to cool.
Eat at your leisure with home made bread and butter.

This one is better and should read "How to tell if you've been bad"but it is too small so i'm still searching for the right one.
I use a bread maker to the dough stage and then do the rest by hand as i like a well baked loaf. Usually very successful I just use the basic mix per instructions.
I LOVE lemon curd! Try making it with limes or oranges instead. I thought I was the only person in the world that liked it - I have never met another, then I found you lot! Yippee for this site!! ;D
