Title: Rhubarb recipes please

made some rhubarb crumble with the rhubarb last week, but fancy making something different this time, maybe some muffins.  Does anyone have any rhubarb recipes ?

Stew some and cool it then bung it in natural or greek yoghurt. Tangy!

Rhubarb Muffins:

I was given this one the other day by a neighbouring plot-holder. Very nice too. (And it's all in English measurements - sorry, can't do cups & stuff.)

Bowl 1:
   10 oz SR flour
   1 teaspoon baking powder
   Â½ teaspoon salt
   3 oz white sugar

Bowl 2:
   1 beaten egg
   8 fl oz milk
   3 fl oz corn oil or 3 oz melted butter

Stir contents of each bowl together, then pour the wet ingredients into the dry & mix well. Stir in gently:
   5 oz rhubarb (or any summer berries, fresh or frozen)

Spoon into muffin cases or deep patty tins. (Makes 10/12.) Bake at 190/200 C (regulo 5) for 20-25 minutes. (Freezes well: eat from frozen.)

And what do you know, they taste just like the small cakes my mother made in the late 40s/early 50s (except she would have have stirred in something like sultanas, or a dollop of jam in the top.
